Caputo’s Italian Rice Pudding Recipe


2 quarts whole milk
2 cups arborio rice
1/2 cup raisins
1 T Marsala wine
4T unsalted butter
1/2 cup sugar
1 pint fresh strawberries, blueberries, raspberries or other fresh berries, cleaned.


In a large saucepan bring the milk to a boil. Add the rice and stir well. Cook at a slow simmer, stirring frequently, until the milk has been absorbed and the rice is tender, approximately 30 to 40 minutes. While the rice is cooking, plump the raisins in warm water for about 30 minutes, then drain well. When the rice is done add the raisins, Marsala, butter and sugar, stirring well. Serve warm topped with the strawberries.
