Caputo’s San Daniele and Apple Salad


8 oz. San Daniele prosciutto, thinly sliced
1 Granny Smith apple, peeled and cored
1 Gala apple, peeled and cored
1 Golden Delicious apple, peeled and cored
1T poppy seeds
1T red wine vinegar
3T extra virgin olive oil
1 head radicchio leaves separated and cut into thin julienne strips
Salt and freshly ground black pepper to taste
4 1 inch-thick slices of Italian bread, grilled or toasted


Arrange the prosciutto slices around the edge of a large platter. Cut the apples into thin julienne strips and place in a mixing bowl. Add the poppy seeds, vinegar, olive oil, radicchio leaves and salt and pepper, toss well.

Mound the apple salad in the center of the platter and surround with the grilled bread, serve immediately.
