1/2 cup water
1/4 cup sugar
3 Tbl. pure vanilla extract
1/2 Tbl. fresh lemon juice
1/2 pint whipping cream, whipped very stiff
3 egg yolks
3 Tbl. sugar
1 lb. mascarpone cheese
1-7 oz. pkg. Italian lady fingers
1 pint blueberries, washed
1 pint strawberries, washed and sliced, save 2 for garnish
2 Tbl. powdered sugar
Combine water, 1/4 cup of sugar and 1 Tbl. of the vanilla in a small saucepan and simmer until liquid is clear. In a bowl combine egg yolks and 3 Tbl. of sugar, whip until lemon is colored and thick, about 5 min. Whip mascarpone and 2 Tbl. of the vanilla until smooth. Combine with the egg yolk mixture, fold in the whipped cream, mix well. Next dip one side of the lady fingers (horizontally) into the syrup and line side of bowl, next cover bottom with lady fingers, spoon in 1/3 of the cheese mixture. Spread the blueberries over cheese, cover with more lady fingers. Repeat with 1/3 of the cheese and this time cover with the strawberries. Cover with remaining cheese and refrigerate for at least 2 hours. Garnish with sliced strawberries and powdered sugar.
