3 slices bacon, diced
1 pound boneless skinless chicken breast, cubed
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 bunch green onions including tops, sliced
1/2 red bell pepper, chopped
1/2 stick celery, chopped
1/4 teaspoon thyme
1 1/2 cups uncooked long-grain white rice
3 cups chicken broth
Fry bacon until crisp. Add cubed chicken and brown. Add remaining ingredients. Bring to a boil. Reduce heat to simmer, cover with a tight fitting lid. Simmer 25-30 minutes or until moisture is absorbed and rice is tender. Fluff with a fork before serving. Garnish with fresh parsley and an additional sprinkle of paprika.
SERVING NOTE: If dish is served as a side dish it will serve approximately 8-10 rather than 6.
HEALTH NOTE: Sodium may be reduced to 213 mg by substituting low sodium chicken broth for the regular broth.
