1/4 cup + 2 Tbl sugar
12oz bittersweet chocolate – chopped
8oz unsweetened chocolate – chopped
8 egg yolks
1 1/4 cups milk
2 cups heavy cream
2 oz mascarpone Cheese
1. Heat both chocolates in a double boiler until melted over barely simmering water.
2. In a sauce pan combine milk, 1 cup of cream and 1/4 cup of sugar. Scald. Place egg yolks in a bowl. Whisk cream into yolks a 1/2 cup at a time. Whisk cream and egg mixture into the chocolate mixture. Whisk in butter. Divide and place into coffee cups or serving glasses. Chill until set.
3. Whip to soft peaks the remaining cup of cream. Add 2 Tbl sugar. Top each pudding with whipped cream and biscotti. Serves 8-10.
