1 cup water
1/2 cup yellow corn tortilla chips, crushed
1/2 cup red corn tortilla chips, crushed
2 6-ounce chicken breasts, boneless and skinless
2 Tbl. cooking oil
Mix the egg and water together in a medium-sized bowl. In a separate bowl, mix together the crushed yellow and red corn tortilla chips. Drop the chicken breasts in the egg-water mixture and then press in the tortilla chip mixture. Place the oil in a saute pan over medium heat and add the chicken breasts. Cook for 4 min, then turn the chicken and cook for 4 min. more. Continue this process 3 more times. Total cooking time: 32 min.
1 cup black beans, cooked
1/2 red pepper, finely diced
2 Tbl. cilantro, chopped
2 Tbl. frozen corn
1/2 jalapeno, finely diced
1/3 cup tomato juice
Mix all ingredients together, spoon over chicken breasts and serve.
