Easily Portable Foods (Note: Be ready to go by keeping a zipped plastic bag filled with plastic spoons, napkins, sanitizer, wipes, etc.)
Individually wrapped string cheese
Carton of yogurt
Turkey slice, cheese slice, and veggies rolled in a tortilla
Crackers topped with pieces of cheese
Precut fruit and veggies with chunks of cheese
Containers of flavored milk (chocolate, strawberry, orange, etc)

Make Ahead Portables

Cheddar Apple Granola Bars (prep time: 10 minutes; cook time: 24 minutes; serves 12)
3/4 cup applesauce
1/4 cup apple juice
2 eggs
1/4 cup oil
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups low fat granola
2 cups (8 ounces) grated cheese

Combine applesauce, juice, eggs, and oil. Beat. Stir in flour, baking powder, salt, granola, and three-fourths of the cheese. Place in a greased 9×13 baking pan. Sprinkle with remaining cheese. Bake at 350 degrees for 20-25 minutes or until edges are lightly browned. Serve warm or at room temperature.
Cheesy Black Bean & Salsa Spirals (prep time: 15 minutes; serves 8)
2 cups canned black beans (about a 15 ounce can)
2/3 cup salsa
8 flour tortillas
8 ounces grated Monterey Jack or Cheddar cheese
1 red or green bell pepper, cut into strips

Drain beans and coarsely mash, stir in salsa. Spread mixture over tortilla, sprinkle with grated cheese. Place strips of bell pepper down center of tortilla. Roll tortilla, cut off ends of tortilla and then cut each tortilla roll into 8 bite size pieces.
