Raspberry Bread Pudding

INGREDIENTS
- 5 slices of “day old” bread
- 1 egg
- 1 c. heavy whipping cream
- 3/4 c sugar
- 1/2 tsp vanilla
Raspberry mixture
- 3/4 c. Raspberries
- 1 1/2 Tbsp granulated sugar
- 3 Tbsp Apple juice
Vanilla sauce
- 1/2 c. Butter
- 1 Tbsp Flour
- 1 cup heavy whipping cream
- 6 Tbsp granulated sugar
- 1 tsp vanilla extract
METHOD
- Cut bread evenly into 1.5 inch cubes. Set aside. In mixing bowl add egg, heavy cream, sugar and vanilla. Mix and stir until sugar dissolves. Add cubes of bread to mixture and lightly toss. Let rest for 15-20 minutes, stirring every 5 mins or so.
- In the meantime, combine raspberries, granulated sugar and apple juice. Mix until well combined and sugar dissolves.
- Spray four, 4 Oz ramekins with cooking spray. Layer ramekins with bread mixture, followed by raspberry mixture. Then repeat with another layer of bread mixture then sprinkle top with a few raspberries.
- Bake 35-40 mins until top bread layer is golden brown.
- While Bread pudding is baking start on vanilla sauce. In small sauce pan over medium low heat melt butter, then whisk in flour. Allow to cook for 6-7 mins, do not allow butter to brown. Then add heavy cream and sugar. Allow to boil till thickened. Remove from heat and stir in vanilla.
Homemade Italian Crostinis

INGREDIENTS
- 1 loaf baguette
- 4 Tbsp olive oil
- 1 tsp italian seasoning
- 1 tsp garlic powder
- 1/2 tsp Redmond garlic pepper
METHOD
- Slice baguette diagonally into 1 inch slices and place in a mixing bowl.
- Drizzle olive oil over bread and toss. Sprinkle three remaining ingredients over bread slices. Toss until evenly coated.
- Spread out on parchment lined baking pan.
- Bake at 375 degrees for 20-22 mins. Halfway through baking time, turn bread slices over. Bread slices should become evenly browned and crunchy.
- Store in air tight container up to one week.
Quick & Easy Homemade Croutons

INGREDIENTS
- 2 thick slices of bread (“day old” – not fresh)
- 3 Tbsp olive oil
- 1/2 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp Redmond garlic pepper
METHOD
- Cut bread into 1.5 inch cubes and place in a mixing bowl.
- Drizzle olive oil over bread and toss. Sprinkle three remaining ingredients over bread cubes. Toss until evenly coated.
- Spread out on parchment lined baking pan.
- Bake at 375 degrees for 20-22 mins. Halfway through baking turn croutons over and toss. This allows each crouton to become evenly golden and baked to perfection.
- Great addition to any salad or added to a hot bowl of soup.
- Stored in air tight container will last one week.
