Dubliner Irish Cheese and Apple Scones
3/4 cup Irish Dubliner Cheese, Grated
1 Cameo, or other firm red apple, roughly chopped
3 tbsp Irish butter, or regular butter cut up
2 cups of Flour
1 tbsp baking powder
2 tbsp sugar, divided
1/2 tsp salt
3/4 cup whole milk


Heat oven to 350 degrees

In a small bowl, toss chopped apples with 1 tablespoon sugar. Set aside in a medium sized bowl, stir together flour, baking powder, remaining sugar, and salt.
Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine granules.
Add apples and toss to mix. Add cheese and repeat.
Pour in milk and stir until it forms a ball.
Place dough on a lightly floured surface and shape into a circle or rectangle. Cut evenly into 10-12 pieces. Place on a baking sheet and bake for 17-20 minutes, or until lightly brown.
Brush with butter and serve warm.

To reheat, place in oven and heat for 3-4 minutes.

Makes approximately 1 dozen
