Famous Christmas Fudge

The fudge is almost as famous as the
beautifully decorated Christmas trees at the
Festival of Trees.



Robin Austin shares gourmet tips for making
fudge.

Fudge
In a large bowl, combine the following and set aside:
1 package semi sweet chocolate chips
2 squares butter
2 teaspoons vanilla


Combine the following in a large, heavy pan and cook on
stove top until mixture reaches 200 degrees on a candy
thermometer:



4 cups sugar
20 large marshmallows
2 small cans of evaporated milk
Mixture will be a golden brown color. Stir constantly but
do not scrape bottom as mixture sometimes tends to scorch
on bottom.



When mixture has reached soft ball stage (200 degrees),
pour over chocolate chip mixture. Stir with a large spoon,
whipping it well.



Add 1 cup chopped nuts and 2 cups miniature marshmallows.
Stir to combine. Pour into 9″ x 13″ pan that has been
coated with butter. Sprinkle finely chopped nuts on top if
desired.



Refrigerate until cool. Cut in squares and package as
desired. Enjoy!!!
