2 6-ounce fresh halibut filets
1/2 cup all purpose flour
salt and pepper to taste
1/4 teaspoon paprika
1 orange, peeled, seeded, sliced, and finely diced
1/2 cup heavy whipping cream
2 tablespoons canola oil
1 tablespoon fresh Italian parsley, chopped
1/2 garlic clove, crushed
Place oil in heavy sauté pan over medium high heat. Season halibut with salt, pepper, and paprika, and dredge in flour. Add halibut to sauté pan and sauté for 3 minutes each side. Remove halibut from pan and place on serving dishes. Wipe pan clean with paper towel. Add the orange and the garlic to the pan and sauté for 30 seconds. Add whipping cream and reduce heat by half, cooking for 2 minutes. Pour the mixture over the halibut. Garnish with parsley and serve.
