Fruit Kabobs

Everyone loves fruit salad on a stick. But these barbecue sides have something more: a personality!

Rainbow Fruit Kabobs
Strawberries
Mandarin orange slices
Pineapple
Kiwis or green grapes
Blackberries or blueberries
Wooden Skewers, cut in half

Basically you want to use all the colors of the rainbow and make sure you are using FRESH fruit! I like to do mine in the color order of the rainbow too but not necessary.
Yogurt Honey Dip
1 cup Vanilla Greek yogurt
About 1/8 cup honey, more if you want it sweeter
Dash of cinnamon

Combine all ingredients together and serve with fresh fruit kabobs
Brownie S’mores Kabobs
Brownie bites- use your favorite brownie recipe, cool and cut into bite size pieces.
Large marshmallows
Graham crackers, crushed
Chocolate ganache for drizzling


Skewer brownie bites and marshmallows, alternating as you go. Drizzle a liberal amount of chocolate sauce and sprinkle with graham cracker crumbs.
Chocolate Ganache
About 1 1/3 cup of semi-sweet chocolate chips
1 cup heavy whipping cream


Place chocolate chips in a medium bowl and set aside. Bring heavy cream to a simmer in a small saucepan, once its to a simmer, pour hot cream over chocolate chips and cover to it can steam. Let sit about 3-5 minutes and stir until smooth.
Pina Colada Kabobs
Fresh pineapple, cut into 2 inch cubes
Banana slices about 1 in thick
Shredded coconut, toasted
Pound cake, cut into 2 in cubes, use your favorite recipe or buy it at the store bakery


Skewer pineapple, bananas, and pound cake alternating as you go. Drizzle with coconut syrup and sprinkle with toasted coconut.
Coconut Syrup
1 cube butter
1/2 cup buttermilk
1 cup sugar
1/2 teaspoon coconut extract
1/2 teaspoon baking soda


In a LARGE pot, slowly melt the butter over medium-low heat. Whisk in the buttermilk and sugar. Turn the heat up and allow the mixture to come to a boil. Boil one minute, then add the coconut extract. Slowly sprinkle in the baking soda while stirring with a whisk. It will start to foam up and get all bubbly. Remove from heat and serve with fresh fruit.
