Homemade Blender Salsa

Ultra Gel not only gives this salsa its initial thickness but it keeps it thick when refrigerated or used in dishes like seven layer dips or cheese spreads.
Roasted Vegetable Salsa
2 lbs roma tomatoes, seeded
2-3 jalapeno peppers, seeded
1-2 Anaheim peppers, seeded
1 bell pepper, seeded
1 medium onion, peeled and grated
3-4 cloves fresh garlic
1/2 c. vinegar
1/4 c. ULTRA GEL
1/2 T. cumin
1 T. chili powder
1/4 t. garlic powder
1 1/2 t. salt
1 T. sugar

Seed and quarter all vegetables (remembering you can add more or fewer peppers for the spice you like!) and place on a wire rack, also place peeled garlic cloves on the rack, over a cookie sheet in a 425 degree oven for 20 minutes or until the skins begin to blister. Remove from oven and blend in a blender or food processor until desired thickness is obtained. Remove to a bowl and add vinegar, spices and Ultra Gel. Serve warm or cool!
