Jim Matheson’s Pumpkin Cake

2 C. Sugar
4 eggs
1 C. oil (for low fat recipe use ½ C. oil and ½ C. applesauce)
2 C. flour
½ tsp. Salt
½ tsp. Cinnamon
½ tsp. Nutmeg
2 tsp. Soda
2 C. canned pumpkin
1 C. chopped pecans (optional)

Combine sugar and eggs, beat until fluffy. Add oil. Sift dry ingredients into egg mixture. Add pumpkin. Blend well. Stir in pecans. Bake in greased and floured bundt pan 350 degrees for 60 minutes. Let stand 10 min and remove.
