2 tablespoons olive oil
1 carrot, peeled and finely chopped
1 onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
2 Roma tomatoes, finely chopped
2 cups cooked lamb
1/2 cup heavy whipping cream
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
grated Parmesan cheese to taste
salt and pepper to taste
Place the olive oil in a heavy saucepan over medium-high heat. Add the carrots, onions, garlic, and tomatoes and sauté for 20 minutes. Add the lamb and simmer for 30 minutes over medium heat. Add the cream, parsley, basil, and salt and pepper to taste and simmer 2 minutes.
Finish with Parmesan cheese and serve over hot pasta.
