Light Pizza Fast


Quick Pizza Sauce:
1 6-oz. can tomato paste
1 14-oz. can ready cut tomatoes, regular or Italian
½ teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 tablespoon sugar – optional
Yield: 2 1/2 cups, enough sauce to top 2 pizzas or 16 servings at approximately 35 calories; 1.5 grams protein; 8 grams carbohydrate; 0 fat; 0 cholesterol; 168 sodium.
Pizza:
1/2 Recipe Quick Pizza Sauce
1 12-inch low fat pizza bread shell, Bobolie, etc.(no more than 2 grams fat per ¼ of shell)
3/4 lb. (12 oz.) 96% to 99% fat free ham, Canadian Bacon, smoked turkey, chicken breast, pastrami, or a combination of any 96% to 99% fat free meats
1 cup sliced mushrooms
1/2 red, green or yellow pepper, chopped or sliced
1/2 small onion, sliced
1 1/2 cups (6 oz.) shredded Frigo Truly Light Mozzarella cheese (2 grams fat per 1 oz.)


In a small saucepan, combine tomato paste, pasta sauce, garlic powder and sugar. Stirring occasionally, cook over medium until hot about 10 minutes.

Preheat oven to 425º F. Place bread shell on a pizza pan or baking sheet; cover with sauce and all toppings, except cheese. Bake 12 to 15 minutes; remove from oven, add cheese, then return to oven for 2 to 3 minutes or until cheese has melted.

Yield: 8 servings at approximately 260 calories; 6 grams total fat; 2 grams saturated fat; 35 milligrams cholesterol; 30.5 grams carbohydrate; 1.7 grams dietary fiber; 21.5 grams protein; 976 milligrams sodium.
