Make yourself a better breakfast! 3 easy recipes that are healthy and filling

A better breakfast doesn’t have to be hard to make.

Your meal can have it all: easy-to-make, filling, and nutritious. There is no better time to achieve all three than at breakfast.

Studio 5 Health Contributor Miki Eberhardt shares three simple breakfast recipes that will warm your soul on cold winter mornings. She also claims that hot cereal can be more exciting than a spoonful of rolled oats. She shares three hot cereal alternatives.

Make Your Own Instant Oats

Just like store bought cups, but made with wholesome, customizable ingredients.

Budget-friendly and lower in sugar than the store-bought version and you can make as many cups as you like ahead of time and stock the pantry.

They will stay good in an airtight container for up to 2 months and are ready to go in just 2 minutes.

INGREDIENTS

  • ½ c quick oats
  • Brown sugar (if desired), cinnamon, pinch of salt
  • Pre-mix-ins: dried fruit and nuts, seeds, pb powder
  • Post-mix-ins: protein powder, fresh fruit, nut butter, honey, etc.

METHOD

When ready to eat

  1. Add ¾ c water or milk, stir.
  2. Place in microwave for 90 sec. (no lid)
  3. Place lid back on container and let sit for 2 min.

 

Power Pancakes

There’s a popular protein pancake mix out there and it’s delicious and easy and packed with great nutrition, but it is expensive. So, here’s a copycat recipe with very budget-friendly ingredients you likely already have at your house. Make ahead, freeze, and pop in the toaster or microwave for 30-60 sec.

Breakfast Burritos

These can be customized with whatever you like in your burritos. We do scrambled eggs, hash browns, sausage, and cheese as a base. I love a good veggie hash to add in. Cook everything up separately and then combine it all in a big pot or bowl.

Add about ½ cup filling to a tortilla, wrap up tightly, then wrap in parchment paper and aluminum foil. Place in a freezer bag.

All that is required is to take foil off, put in microwave for 90 seconds, and it’s ready to go. You can add salsa, sour cream, or guac and wrap up and go.

 

Other Options for Hot Cereal Besides Classic Oats

Muesli

Popular all over Europe. Invented over a century ago by a Swiss doctor who knew the power of good nutrition. Made of rolled grains like oats, barley, wheat, rye and also nuts, seeds, and dried fruit. Can be eaten cold with milk or in yogurt, but this time of year, add some hot water and enjoy a hot cereal full of amazing textures.

Swiss-style is add it to ½ c yogurt, add in shredded apple and let it sit overnight in the fridge.

5/6/7/8/9/10 Grain Cereals

This is one of those categories where if one is good, more must be better? These whole grain cereals offer different options that can be sourced based off allergies while all providing amazing nutrition from whole grains that will fill your tummy because of the fiber and offer something warm to keep you filled all morning long.

Oat Bran

Rolled oats, oat flour, steel cut oats, instant oats and old fashioned oats are just a few of the many oat varieties you might see. However, oat bran is a different ingredient entirely. When you eat rolled oats, you consume the entire oat groat in flattened form. Oat bran, however, is made up of the only outer shell of the oat groat seed. So, although oat bran comes from the same process as oats, they’re two entirely different ingredients.

  • Oat bran has slightly more protein.
  • Taste similar, earthy & nutty
  • Oat bran cooks quicker
  • Can add it into other recipes like pancakes, muffins, cookies, etc.
