Marinated Tomatoes

4 to 5 tomatoes, peeled and quartered
2 Tbl. apple cider vinegar*
2 Tbl. sugar
2 Tbl. oil
1 tsp. salt
1/8 tsp. black pepper
1/2 tsp. dried basil OR 1 tsp. fresh basil
2 Tbl. parsley, chopped
1 cove garlic, minced

Peel and quarter tomatoes into large bowl. Mix dressing ingredients together. Pour over tomatoes and gently mix. Cover and marinate in refrigerator 3-4 hours or overnight. Serve chilled.
