Mexican Shrimp Scampi


Scampi Butter Ingredients:
1 pound butter, unsalted, softened
1 orange, juiced
1 lemon, juiced
1 lime, juiced
1 teaspoon chile flakes
1 tablespoon garlic, chopped
1 bunch cilantro, chopped
salt and pepper to taste


Combine all of the above ingredients together and set aside.

Shrimp Ingredients:

  • 10 16/20 shrimp, peeled and deveined
  • 2 tablespoons of scampi butter
  • ½ cup cream
  • ½ cup white wine or water
  • 1 teaspoon olive oil
  • salt and pepper to taste

    Method: Over medium high heat, place olive oil in a sauté pan and heat to temperature. Add shrimp and sear on both sides (approximately two minutes). Add white wine and cream, reduce heat to medium low and reduce sauce by half. Remove from heat and add scampi butter. Stir until thoroughly incorporated. Add salt and pepper to taste. Serve over rice.
