Peanut Slaw Burgers

It might not be what’s in the burger, but
what’s on top that counts.

Burger
1 lb ground pork

½ tsp onion powder

½ tsp chili powder

½ tsp salt

½ tsp paprika

½ tsp garlic powder

1 tsp liquid smoke


Combine all of the spices. Gently mix into the meat and form
into 3 or 4 ( 1/3 lb or ¼ lb) patties. Cook on the grill,
making sure that the center reaches 160F. Place cooked patty
on toasted bun, top with barbecue sauce and peanut slaw. Pig
out!

Peanut Slaw
¼ head of red cabbage

¼ head of green cabbage

1/3 c mayo

1/3 c sour cream

2 tsp. granulated sugar

2 tsp. lemon juice

½ c. salted peanuts


Finely shred the cabbages. Combine the mayo, sour cream,
sugar, and lemon juice until creamy. Toss the cabbage with
the dressing. Top with salted peanuts.

Cooler Corn
Shucked ears of corn
Insulated cooler
Boiling water


Place shucked ears of corn in the cooler. Pour boiling water
on top of the corn and close the lid. In 30 minutes the corn
will be perfectly cooked, and will remain perfectly cooked
and fabulous for a couple of hours. This is a wonderful way
to cook corn for a crowd.
