Rob Bishop’s Danish Aebleskivers


2 cups sifted flour
3 TBS sugar
3 eggs (separated)
1 tsp baking soda
1 cup sour cream
3/4 tsp salt
1 cup milk
1/4 tsp nutmeg (opt)
3 TBS melted margarine

Sugar, powdered sugar, jam – for dipping


Combine: flour, soda, salt and nutmeg. Beat egg yolks until thick and lemon colored. Stir in: sour cream, milk and margarine.

Make a well in the center of the dry ingredients and add liquids. Mix. Beat egg whites to soft peaks. Fold into batter.

Brush pan wells with margarine. Fill each well 1/2 full of batter. Turn often to brown. Cook over low to med heat.

Makes 48 balls.
