Santa’s Favorite Jumbo Chocolate Peppermint Cookies

These jumbo chocolate peppermint cookies are officially our favorite part of this Christmas.

Think Crumbl or Chip cookies, but from your own oven! These jumbo Christmas treats are going to be on repeat this holiday season. Add what ever mix-in’s you’re craving and get baking!

Jumbo Chocolate Peppermint Christmas Cookies

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 sticks softened butter
  • 2 large eggs + 1 egg yolk
  • 1.5 teaspoons vanilla
  • 1/2 cup cocoa powder 
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon corn starch (optional)
  • 2 3/4 cups all-purpose flour

 

Mix-ins (choose one or two):

Candy Cane Hershey’s Kisses

Peppermint baking chips

 

Directions

Preheat oven to 400°.

 

With an electric mixer, cream together sugars and butter. Mix until light and fluffy and make sure to scrape edges of the bowl.

 

Crack eggs into a separate bowl and add them to the mixer one at a time. Add vanilla. Mix until dough is again light and fluffy. 

 

Add cocoa powder, mixing until it is well incorporated. Add baking soda, salt and corn starch. Mix in flour one cup at a time.

 

Gently stir in chosen mix-ins.

 

Line two baking sheets with parchment paper. Using a food scale, form 6 ounce dough balls and add to baking sheet, four dough balls per sheet.

 

Bake for 10-12 minutes.

 

If desired, add chocolate peppermint drizzle.

 

Peppermint drizzle:

1 cup chocolate chips (milk, semi-sweet or white)

1/2 teaspoon McCormick’s pure peppermint extract

2-3 crushed candy canes (optional)

 

In a microwave safe bowl, melt chocolate chips for 1 minute in the microwave. Stir and continue to melt in 15 second increments until chocolate is melted. Stir in peppermint extract. Place melted chocolate in a piping bag or in a ziplock bag (cut the corner to drizzle). Drizzle onto cooked cookies. 

 

Optional: Top with crushed candy canes. Crush by placing candy canes in a large ziplock bag and smash with the bottom of a cup.
