Smoked Turkey Salad

Turkey Salad
1 1/4 pounds smoked turkey breast, chopped
1 cup chopped green onions
3/4 cup chopped celery
1/3 cup low-fat mayonnaise
2 tablespoons chopped fresh thyme
salt and pepper to taste
2 1/3 cups coarsely chopped pitted cherries
1/2 cup coarsely chopped toasted walnuts

Thyme Vinaigrette and Green Salad
6 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon chopped fresh thyme
salt and pepper to taste
8 ounces mixed baby greens


For the turkey salad, combine the turkey, green onions, celery, mayonnaise and thyme in a medium bowl. Season with salt and pepper and mix well. Add the cherries and walnuts and mix gently.

For the vinaigrette, whish the olive oil, vinegar and thyme in a small bowl until smooth. Season with salt and pepper.

Combine the vinaigrette with the green in a large bowl and toss to mix well. Spoon onto serving plates. Spoon the turkey salad onto the top. Serve with warm wheat bread.
