that craving for a crisp, fresh Spring salad!


Pear and Pecan Salad

cheese in a sweet red wine vinaigrette.

Brooke says: “Normally, when I go out to eat, I want something warm
and complicated – a menu item I couldn’t make at home. But this salad fits
the bill! I love the combination of fresh flavors; the pecans add that
unexpected crunch. Do take this ordering tip: I highly recommend trying it
with the lemon vinaigrette dressing, instead of the sweet wine it usually
comes with!”

Mallory says: “I love, love, cobb salads and this particular one takes the
cake. It packs on the toppings, so that you don’t have just lettuce in your
last bite. Perfect lettuce to toppings ratio. The dressing is to die for, light
and ‘vingaretty’…and the rotisserie chicken makes it so much better than
typical cob salads. Love it!”

sweet salad departure, my favorite is the Chicken Mango salad from Costa
Vida. Mangoes make it tropical and cool and fresh. Plus you can buy a
small version of the same salad! It’s got all the makings of Utah’s favorite
fresh-mex tradition, including the hand-crafted tortilla piled with rice,
beans and loads of lettuce, topped with chopped mango and chicken. I
always get it with the house tomatillo ranch dressing. “
