Stuffed Corn Bread Muffins
1 box corn bread muffin mix
Any leftovers in refrigerator


Make a batch of cornbread muffins according to the package directions; however, don’t fill the
Muffin cups quite so full – just about halfway will do. Then, place a heaping spoonful of leftover
mix in the center of each one and bake, again according to the package directions. The muffin batter
rises up around the mixture, making a fun and surprising side that complements any main course.
The flavor combinations are endless – it just depends on what’s in the refrigerator.

Left over chili will complement a Mexi-style meal.

Hamburger and a little shredded cheese plus a squirt of ketchup make a cheeseburger muffin.

Chicken, crumbled bacon and a dollop of ranch dressing deliver a fresh chicken ranch flavor.

Vegetable blend (such as peas, carrots and corn) topped with cheese is a nice vegetable alternative.
