Stuffed Homemade Spinach Pasta

If you’re making lasagna, there is no need to
run to the store for your noodles!



Becky Low says every cook should learn to make
their own pasta noodles.

Pasta Filling
8 ounces fresh spinach
2 hard boiled eggs, optional
2 ounces (4 slices) Provolone cheese slices
1 cup shredded Mozzarella cheese
2 cups savory bacon Alfredo sauce
½ cup shredded Parmesan cheese
chopped tomatoes, optional garnish
snipped fresh basil, optional garnish

Homemade Pasta Noodles
1 cup flour
½ teaspoon garlic salt
½ teaspoon lemon pepper, optional
2 eggs
2 tablespoons milk


Preheat oven to 350 degrees.



Cook spinach and drain. Hard boil optional eggs, shell and
slice; set aside.



Stir together flour, garlic salt and optional lemon pepper.
Make a well in center of flour; add eggs and milk. Using a
fork whisk eggs, gradually incorporating flour until egg
mixture (if needed, add a little extra flour to produce a
dough stiff enough to handle. Press dough together into a
ball and knead on a floured surface until smooth. Flatten
ball and roll into a 10×18 inch rectangle (to prevent dough
sticking to surface continue to sprinkle flour under dough
as needed).



Spread approximately ½-cup Alfredo sauce in bottom of 9×9
square pan or approximate size casserole dish. Using
rolling pin to lift dough gently place in pan; dough
overlapping on both sides. Arrange drained cooked spinach
in bottom of lined pan; arrange sliced eggs over spinach;
spoon approximately 3/4-cup Alfredo sauce over eggs and
spinach. Arrange slices of Provolone and shredded cheese
over sauce; fold pasta dough over filling and spoon
remaining sauce over top stuffed pasta. Bake 50-60 minutes,
remove cover, sprinkle with Parmesan cheese and bake
another 5-10 minutes. Allow to stand 10-15 minutes before
cutting. Serve garnished with chopped fresh tomatoes and
snipped fresh basil. Serves 6



Notes:
Using old fashioned tried-and-true homemade pasta with a
upbeat stuffed entree your family will love. Experiment
with fillings of your choice: cooked chicken, mushrooms,
onions, marinara sauce, etc. Serves 6
