This old-time recipe is a breakfast disguised as a dessert.
Jacqueline Gunderson shares her modern spin on this classic recipe.
Breakfast Cookies
1 cup softened butter
1/1/3 c packed brown sugar
1 tsp. cinnamon
1/2 tsp allspice
1/2 tsp ground cloves
1/2 tsp. salt
4 beaten eggs
1/2 cup hot water
3 cups flour
1/2 tsp baking soda
1 tsp baking powder
Mix-in options: nuts, dried fruits, chocolate chips, whatever you like!
I have my non-negotiable mix-ins for my kids like ground flaxseed, wheat germ, and poppyseed.
Pre-heat the oven to 375.
Mix Butter, brown sugar, spices, eggs, first. then gradually mix in flour, baking soda, baking powder and your “non-negotibles”. Once you’ve added your favorite mix-ins (chocolate chips, coconut, etc.)
Place on a buttered pan in same-size rounds (about 2″ rounds) and bake for 12-14 minutes on the middle rack in your oven!
Enjoy!
