Tortilla Casserole

1 lb. extra lean beef, **
1/2 lb. lean sausage meat, **
1 onion, finely chopped
1 15 oz. can black beans, drained (about 2 cups cooked)
1 4 oz. can green chili, chopped
2 cups salsa
8 corn tortillas
1 cup nonfat sour cream
1 10 3/4 ounce can cond. cream of chicken soup
1 1/2 cups cheese, grated
cup olives, for garnish, (optional)
** Recipe may use all beef, all sausage, or other meat of choice.

Brown beef, sausage, and onion together. Drain off excess fat. Add drained beans and the chillies.

Spread 1/2 cup salsa on bottom of microwave safe casserole dish or a 9 X 13 pan.

Cut tortillas in half and arrange 1/2 the tortillas on the bottom of the baking dish. Combine 1 cup salsa, sour cream, and condensed soup. Spread tortillas with 1/2 of the sour cream mixture. Spread with 1/2 the meat and bean mixture, sprinkle with 1/2 the cheese. Repeat process. Cover with plastic wrap (be sure wrap does not touch casserole). Microwave on high for 20 min. turning 2-4 times during cooking process. Casserole is done when it is hot and bubbly in the center. Remove from microwave, allow to stand 10 min. before cutting. Garnish with sliced olives and remaining salsa.

NOTE: Casserole may be baked in traditional oven. Replace plastic wrap with foil and bake at 350 degrees for 30-40 minutes or until hot and bubbly.
