If tomatoes aren’t your jam, try watermelon salsa!

It’s summer’s biggest fruit. While it’s usually eaten by the big, juicy slice, this melon is more versatile than you might think.

Watermelon Fries and Fruit Dip

Cut your watermelon into fry-like pieces and dip your heart out.

Vanilla Fruit Dip

INGREDIENTS

  • 8 oz. Cream Cheese
  • 7 oz. Marshmallow Fluff
  • 2 tsp. Vanilla

 

Yogurt Fruit Dip (Your choice of flavor)

INGREDIENTS

  • 10 oz. Yogurt
  • 8 oz. CoolWhip

METHOD

Mix in the matching fruit or zest from the flavor you choose.

Flavorings, i.e. Vanilla, Strawberry, Lemon or Lime, Oranges.

 

Vanilla Spice Fruit Dip

INGREDIENTS

  • 13 oz. Marshmallow Fluff
  • 8 oz. Cool Whip
  • 1 tsp. Vanilla
  • 1 Tbsp. lemon juice
  • 1/2 tsp. Ginger
  • 1/2 tsp. Nutmeg

 

Watermelon Strawberry Salsa

INGREDIENTS

  • 2 Cups Watermelon
  • 1 Cup Strawberries
  • 1 Jalapeño
  • 3 Tbsp. Red Onion
  • 1/4 Bunch Cilantro
  • 1 Tbsp. Fresh Basil
  • 1 Tbsp Fresh Mint
  • 2 Tbsp. Honey
  • 1 Tbsp. Lime Juice

METHOD

  1. Chop watermelon and strawberries into small cubes.
  2. Chop Jalapeño and red onion into small pieces.
  3. Chop cilantro, basil, and mint.
  4. Put all ingredients into a bowl.
  5. Add the honey and lime juice and mix.
  6. Serve with tortilla chips or pita chips.

 

Watermelon Mango Salsa

INGREDIENTS

  • 2 Cups Watermelon
  • 2 Cups Mangoes
  • 1 jalapeño
  • 3 Tbsp. Red Onions
  • 8 leaves Basil
  • 2 Tbsp. Lime Juice
  • 1 Lime Zest
  • 2 Tbsp. Sugar
  • 1/2 tsp. Garlic Salt

METHOD

  1. Chop watermelon and mangoes into small cubes.
  2. Chop Jalapeño and red onion into small pieces.
  3. Stack the leaves of the basil and roll in a log. Cut across the basil. Continue to cut until small pieces form. (Use the Chiffonade Knife Cut)
  4. Put all ingredients into a bowl.
  5. Add the honey, lime juice, zest, sugar and garlic salt and mix gently.
  6. Serve with tortilla chips.

 

Watermelon Syrup

Perfect for making watermelon lemonade, watermelon limeade, or a watermelon club soda.

INGREDIENTS

  • 1 3/4 Cup  Watermelon Juice
  • 1 Cup Sugar

METHOD

  1. Put a handful of watermelon in a blender
  2. Blend until smooth.
  3. Pour this through a strainer until free of pulp. Throw away the pulp and only use the juice.
  4. Measure to make sure you have the desired amount of watermelon juice.
  5. Pour this into a glass jar.
  6. Add one cup of granulated sugar.
  7. Shake for two minutes.
  8. Set this aside for a few minutes and then shake by hand again for two minutes.
  9. Will stay fresh in the refrigerator for one week. Use in mocktails, lemonades and limeades.

 

Watermelon, Banana and Strawberry Smoothie

INGREDIENTS

  • 1/2 Cup Frozen Banana Chunks
  • 3/4 Cups Frozen Strawberries
  • 1/2 Cup Yogurt
  • 1 Cup Fresh Watermelon
  • 1 Tbsp. Lime Juice

METHOD

Blend all ingredients in a blender until smooth.  Serve immediately.

 

Coconut Watermelon Smoothie

INGREDIENTS

  • 4 Cups Frozen Watermelon
  • 2 Cups Coconut Milk or coconut Cream
  • 2 Tbsp. Maple Syrup
  • Pinch of Salt

METHOD

Put all ingredients in a blender until smooth.  Serve immediately.
