Wensleydale Cranberry Pistachio Cheese Ball

INGREDIENTS

  • 2 pkgs 8 oz cream cheese
  • 7 oz Wensleydale Cranberry Cheese, cut into pieces
  • 1/2 cup dried cranberries, reconstituted by if necessary
  • 1-1 1/2 cups coarsly chopped pistachios

METHOD

  1. With an electric mixer, beat cream cheese, until smooth. Add Wensleydale cheese, and dried cranberries, and beat until thoroughly blended.
  2. Lay a piece of plastic wrap onto a flat surface. Place a pile of chop nuts in the center then while scraping the bowl from a ball out of the cheese mixture. Place cheese on top of nuts and gather nuts around the cheese ball and lightly press, using the plastic to make a good shape.
  3. Wrap tightly and refrigerate for 4 hours, or overnight.
  4. Makes one party size cheese ball.
