Spicy Peach Chutney
12 ripe peaches, pitted, peeled and coarsely chopped
3 red onions, coarsely chopped
3 large jalapeno, seeded and minced
1 c. sugar
1 t. salt
1 – 2 t. pepper
½ c. white wine vinegar
Place all ingredients in a large heavy pot. Simmer over low to medium heat for 45 minutes to an hour until reduce down and thickened.
Transfer to sterilized canning jars and water bath for 10 minutes.
Delicious with chicken, pork, fish or spread on bread with any sandwich! Also good poured over cream cheese and served with crackers.
