Wasabi Crusted Salmon
1 cup wasabi peas (about, more or less to taste)
6 salmon fillets (4-oz ea)
Flake finishing salt
Toasted Sesame Ginger dipping sauce
Heat oven to 300 degrees.
Place wasabi peas in food processor and pulse until fine (but not powder). Place crushed wasabi peas on plate. Dredge non-skin side of salmon in wasabi and place skin side down on baking sheet. If needed, sprinkle additional wasabi over top of salmon to ensure all edges are coated for the crust. Bake 10-20 minutes (depending on thickness of salmon) or until salmon easily flakes with a fork.
Sprinkle lightly with flaked finishing salt and serve with dipping sauce. Serves 6
