Sven’s Favorite Orange Carrot Cookies

These orange carrot cookies are the perfect Christmas Eve treat.

Santa loves cookies, his reindeer love carrots – what if you put the two together? A dash of orange and a dollop of frosting on top make for a Christmas cookie Frozen’s Sven would approve of. We know what you’re thinking, “carrots in a cookie?” You won’t even taste them.

Becky Low is back in the kitchen to teach this recipe to some special guests, Brooke’s kids! Emme, Boston, and Lucy get their hands dirty mixing up the dough while Penny sits back and looks pretty.


 

Orange Carrot Cookies

Ingredients

  • 1 ½ cups butter (3 sticks), room temperature
  • 2 cups sugar
  • 2 eggs
  • 2 cups mashed cooked carrots
  • 2 teaspoons vanilla
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups chopped pecans

Orange Frosting

  • 2-3 tablespoons orange zest
  • 5 tablespoons orange juice
  • 3 tablespoons butter, softened
  • Pinch salt
  • 3-4 cups powdered sugar

Method

Preheat oven to 375 degrees. Line baking sheet with parchment paper.

Beat together butter and sugar until creamy and fluffy. Add eggs and beat. Stir in mashed carrots and vanilla.

Whisk together flour, baking powder, salt, and nuts.

Stir dry ingredients into butter and sugar mixture. Mix until combined. Drop by spoonful on prepared baking sheet. Bake 15-16 minutes, or until lightly browned on bottoms. Cool

Prepare frosting. Beat together orange juice, butter, salt, and about 1-cup powdered sugar until smooth. Gradually beat in enough more powdered sugar to created desired consistency. Using the back of a spoon, smear, or spread on cooled cookies. Allow frosting to set up.
