Party Tray Protocol

Order 2 smaller trays rather than 1 large one of the same food. Trade the trays out 2 1/2 – 3 hours into the party. Slip remaining food into baggie and into refrigerator. Food can be out of temperature 4 hours before becomes health hazard. So this prevents illnesses.

Order one large tray, and re-plate onto your own smaller dishes. That allows you to personalize the trays as your own. Think of the color of the food when re-plating. Cheese can be placed on a patterned plate, whereas bacon wrapped shrimp would be better on a white plate to contrast the food.

Remember the Rule of 3. Always have three items for guests to choose from i.e. meat/cheese, fruit, sandwiches or salmon, veggie tray, cheese ball.

Prepare food for 1/2 of invited guests. If you invite 16 couples (32 people) the average turnout would be 8 couples (16 people). So plan food for 16-20 people. You’ll have enough food without tons of leftovers.
